Salad Olivier

This is a famous and somehow traditional salad in Iran, served as a side dish or appetizer. It’s tasty and can also be served with bread as a meal. I wish I knew the exact origin of this salad but it seems that no one knows. Some people say It’s originated from France because of its name, but there is a debate on this ;) .

Some of my friends asked me to write my recipe. So here it is :)


6 cooked eggs

4 cooked medium potatoes

1 cup cooked green pees

½ cooked whole chicken or 2 breasts and 2 thighs skinless, boneless

100 gr. pickles

1/8 cup olive oil

1 ⅓ cup (olive oil) mayonnaise

1 ½ squeezed lemon

1/16 cup white vinegar

Salt as desired


Cut potatoes, eggs & chicken in small cubes 1 cm. Cut pickles to a smaller size. Put all the ingredients in a bowl and mix them well with a spoon. Put it in a fridge for at least 2 hours.

The prepared salad is approximately 1,600 kg. You can prepare everything with half or quarter of ingredients. In this case, for half a portion use 4 eggs and for a quarter use 3 eggs. The egg is the trick ;) in this salad.

Note: You can use 100 gr. cold cuts (chicken, turkey or ham) instead of chicken but try it first with chicken.

Simple Appetizer: My Salad de pommes

This is a simple and fast preparing appetizer yet extremely tasty!


10 gloves of garlic peeled and finely chopped

2 tbsp oil for frying

3 medium potatoes (white, yellow or red) cooked and piled

1 big apple pilled and seeded

Hellmann's Olive Oil Mayonnaise

3 tbsp Spoon (olive oil) Mayonnaise
or as desired

1 tbsp spoon olive oil

1 tsp freshly squeezed lemon

⅓ cup sesame seeds (if desired but not necessary)

Salt & pepper if desired


  • Chopped GarlicIn a small non stick frying pan pour the oil and bring the heat to high.
  • Once oil is hot pour in the chopped garlic. The heat should Fried Garlicstay high for a crispy result. Stir occasionally. Once the garlic is fried and golden remove it from the heat. Remove the golden garlic from the oil and bring it to a kitchen towel to take out the excess oil and put it aside.
  • Cut potatoes & apple in small cubePotatoes and Apples cut (1 cm X 1 cm). In a bowl mix the potatoes, apple, olive oil, mayonnaise & Mixing the apple, potatoes and mayonnaiselemon.
  • Bring the salad in plate and dressing it with sesame seed and fried garlic on top. (Make sure the garlic doesn’t have oil.)
  • For a more aromatic taste sometimes I add 2 tbl spoon My salad de pommes appetizerfinely chopped smoked turkey
